Where in Mexico are you going?
My wife and I took a great cooking class in Oaxaca from a woman named Pilar who owns(?) the La Olla restaurant and the Las Bugambilias B&B. I found some web pages:

I can also hearily recommend both the restaurant and B&B. And the restraurant will sell mole paste (black and red) that you can take home and freeze until you want to use it.
The Camino Real is OK, but I ended up far prefering the B&B-type places we stayed in in the downtown area. The Camino Real is a bit too much like a remote touristy place for my tastes. It does have a great view of the valley though. My recommendation is to take a cab up there and enjoy a meal.
Speaking as one who has no need for Mexican cooking classes since my next door neighbor is from Manzanillo–and is making the ceviche and guacamole for my party on Saturday–but, this looks interesting:

I also recommend you visit http://www.chowhound.com. Go to the Int’l Board. Do a Mexico search. Even though you won’t find cooking classes there (I think), you will find very useful restaurant recommendations.
