Agree that Allen & Son has the best pure Eastern-style barbeque in the area, using hickory wood for their fire. Dip’s is a different type of place, not for barbeque at all but some of their other things are good. Bullock’s barbeque is ok– actually I’d say it’s pretty good for a place that uses gas– but their real advantage is in the profusion of side dishes and other entrees, their Brunswick stew, and their desserts. They do a nice all you can eat family style meal with barbecue, fried chicken, Brunswick stew, and many sides.

Dillard’s in Durham is a rare example of South Carolina-style mustard sauce in NC, and worth a look if you want to see that style.

I’m not going to tell you how to get western NC-style barbecue, like those heretics serve in Lexington. Sorry. Ketchup is an abomination in barbecue, fit only for those who don’t know how to cook their pork.

I envy you your research. Carolina que seems to be like Texas que in that it has a lot of regional variation, as compared to the Memphis and Kansas City styles.

Good suggestions above, especially Allen & Son. But if you’re on a Quest, then take Tim G’s suggestion, and head to Goldsboro and Wilbur’s. They’re one of the remaining wood open pit places around – surprisingly they cook with oak rather than the more popular hickory.

I’ve eaten a lot of BBQ, and for my money, Wilbur’s beats them all.
