When in Morocco:
* expect to have guys aggressively offering to be your “guide” in six or seven languages
* eat the French food too
* specify that you get your drinks without ice (e.g. soda straight from the bottle/can or fresh-squeezed juice)
When in Marrakech:
* expect street entertainers to aggressively solicit you for tips
* go to the jemaah el fnah *at night*
* if you go into the souk by yourself, assume that you will get lost; it will be less disconcerting when you do
When in Casablanca:
* have an itinerary; Casablanca feels like a charmless, generic large city and it’s not particularly fun to just wander around
* visit the King Hassan II mosque and see some seriously intricate architecture
Overall, it’s great fun for a male foodie.
The biggest fresh-OJ market I’ve even seen is the one at jemaah el fnah. You will also be able to drink Hash tea (no apparent effects) and get your teeth pulled by a guy with big pliers.
Don’t look for Rick’s in Casablanca. That place was in Tangiers…

I concur with all suggestions above, though I had no trouble with the
water in Fez, Marrakech, or Casablanca. Stay away from tourist
restaurants (bland food and ridiculous prices). Do eat the street food,
especially at jemaah el fnah.
Also, find bars — their bar food is really good and it’s free. Yes,
there really are bars and the beer is good. If your interest is
markets, I would recommend Fez over Marrakech. BTW, there is a train
station in the Casablanca airport that takes you into town. From there,
you can get a train to Fez or Marrakech.
Let me second the recommendation for Fez over Marrakech, if markets are your interest. The medina in Fez is incredible. However I found Marrakech a far nicer place to visit overall. Expect to be pestered and scammed wherever you go, though that is part of the fun, as is haggling.
I was there last spring — one thing I learned (was taught actually, by Moroccans) about gracefully declining merchants is to say “Perhaps tomorrow”. You both know that’s unlikely, but it allows both sides to part with a smile. It also seemed that the folks in the souk learn new faces quickly. After a couple of days we weren’t nearly so deluged by offers of commerce.
I was only in Casablanca briefly, but it seemed a much edgier place — Morocco has fiercesomely high levels of unemployment, and Casablanca is edged by enormous shanty-towns of those who have come seeking work. Marrakech and Fes were much more relaxed.
